Lama Su talked about a Jedi Master Cypher Dias. Was this a real person...or was it an alias for somebody else?

I think he was a real person, since Obi-Wan knew who he was. I'm guessing either Dooku or Sidious killed Sifo-Dias, and then made the order in his name, to hide the truth from the Republic.

there were a few theories being shot around about who it was...try a search for it

i thought it was Qui-Gon cause he died 10 years before EP2
