My only guess is that the cosmic rays somehow hold his rocks in place. But it is just one of those times where you just have to suspend your disbelief. In a world that asks you believe that cosmic rays somehow change 5 different people in 5 different ways, you just kind of have to accept that Thing's rocky surface would be held together even after being hit by electricity.
