Kent Nelson compared to Nabu is like Hal Jordan compared to Ganthet or Captain Marvel compared to the Wizard Shazam. Nabu is above skyfather easy.

I have around a hundred or so PC Fate appearances, I've grown to love him.

So, how come Strange is up against a higher-than-skyfather character without any prep or anything?

Nabu is a fundamental force.
He was created before the material universe/big bang was.
He's considered older and more powerful than the Guardians.
Probably the oldest being in the universe, save angels and devils.

He's the most powerful magical entity in DCU bar like Spectre. He is the Head of the Lords of Order. And he has power, skill, intelligence, and like everything else wayyyy above Strange. He's like PC FateX100000000000...
