Hands down, the best anime ever for me is Bleach. Then comes the likes Naruto, Full Metal Alchemist, Fruits Basket, One Piece...etc

Personally, I'd say Kino's Journey, because it is the only one that has had any long term affect on me.
Ultimately, too much awesomeness to choose from. I can't even come up with a top five. When the day comes when all anime are remakes of other anime and this question is asked again(and it will be, multiple times, over and over again) I'll have the answer.
