As to who would win well I have spent a lot of time researching these characters and I would say Black Knight wins a good majority of the time.

But then accidently kills his opponent and thus loses

Black Knight's ebony blade will take care of Cannonball's field, and in the art of combat, the Knight simply has more experience.
