Apocalypse could possibly keep up with Supes (Anyone with raw physical powers could), but eventually would lose like Mongul Jr. does...

Considering Apocalypse can increase his physical attributes, not to mention possessing among other abilities, he could possibly hold his own better than Mongul Jr...

Apoc was always one of the more interesting villains, i don't understand why they don't showcase him more.
