Can Carnage hack Colossus body? Are you allowing that?

Carnage would have to be nerfed quite a bit for Colossus to have a chance.

Around what level would you say Carnage is?

Currently? He's herald level, but even before that he was still pretty haxx (see his tangle with Silver Surfer and how effortlessly he mind-controlled Wolverine, Cap and Thing effortlessly, all of whom have plenty of willpower feats).

Edit: he also has the Spot's powers, as well as Hydro-Man....or maybe he's lost them now?

Herald level? Interesting. Low or mid?

Maybe mid? A lot of potential there, to be sure.

I mean classic Carnage, prior to any recent upgrades. If classic Venom was shown in a comic to lose but put up a good fight to classic Juggs, I could easily see Maximum Carnage taking it to classic Colossus.
