I don't know, they touch on Dooku earlier, but do we really get invested? He's like the Kessel Run of characters, or Alderaan. They try to add in backstory but it's kind of... meh. He did good things? Any examples besides being a Jedi and not assassinating people? Reading about him, up to TPM or AOTC, yeah it could be a surprise (although with the facts out they plant more hints, usually).
We see him with the separatists... well since they aren't supported by the Jedi we as the basic audience see them as the bad guys, and they tried to assassinate Padme.
A real surprise would be Obi-Wan doing something dark, or Yoda (and maybe Anakin's interest is piqued). They pretty much stay on the up and up, though. Or Qui-Gonn being sort of light-dark balanced, or at least helping separatism.
I think I saw him in promo pictures or the newspaper as a villain... for most viewers the awareness probably ruins surprises, not living in a vacuum.
But it's like seeing ESB after 1980, everyone knows Luke is his son and it's assumed, but there's a continuity from the beginning.
