well i more or less put sasquatch in the situations mr.incredible were in, robots blah blah. and since i recently seen the movie i have a better memory of the beating he took and gave. he can be cut/clawed at. so he will get damaged but i think he can hold his own, more so if he is out for blood himself. given he has some back issues but if that factors in any im not sure since it seemed to be something more for laughs than any 'weakness' given. it was something of a one time joke O_o

i figure its really just 'can he beat him senseless/ko before he loses to much blood?'

Mr.Incredible really didn't do anything Sasquatch hasn't already done or can't do.

Sasquatch has a healing factor so losen blood isn't going to do much.

Sasquatch wins but Mr. Incredible makes him earn every win he gets.

In fact Mr. Incredible could probably take a few wins.
