so, place your bets... who do you think would win this fight?

Toph:
-Is Blind
-Cannot read/write
-Cannot see thing's that arnt touching something that's on the ground

+Can see thing's bye using Earth Bending
+Can Bend Metal
+Can Cover Herself in Rock/Metal
+is a great trickster

Itachi:
-Lack of a Personality
-Killed his family
-Cares a lot for his brother

+Can use Amatsuru (don't know how it's spelled)
+Killed his Entire family
+A master of using the Sharingan
+great at Gen Jutsu, Tai Jutsu, and Ninjutsu.

for me, my money is on toph...

Toph would win for four reasons:

1. Toph can earthbend, sandbend, and metalbend , so she can easily shield herself from his attacks by building rock barriers or burrowing into the ground. She can also make quick getaways by riding Appa or using earthbending to travel (like in The Crossroads of Destiny).

2. Although she's blind, Toph's earthbending enables her to sense movement on the ground, sort of like using sonar, radar, or echolocation. Basically, she can sense what her opponent's planning before they do it.

3. Toph, like other Benders, uses chi, which is limitless spiritual energy, unlike Naruto characters, who rely on chakra, which is a mixture of physical and spiritual energy. If too much chakra is used at once, it leads to severe exhaustion and possibly death. Even Itachi would need to be careful, while Toph can continue. She, like everyone, will get tired, but at least she won't drain her life energy every time she fights.

4. Most importantly, Toph's blindness in itself can serve as protection, because when Itachi uses Sharingan-based attacks like Tsukuyomi, he uses eye contact with his opponent, particularly Sasuke and Kakashi, to create violent, traumatic illusions that cause opponents to have a major panic attack or nervous breakdown, leaving them vulnerable or emotionally scarred. But Toph is blind, so this technique would have NO EFFECT on her.

...And that's why Toph would whup Itachi's butt. AVATAR RULES!!!

Itachi one shots her with Susano or Amaterasu.

Or with his bare hands before she can react. Whichever you choose.
