Easiest Time?
Gundam 00, piercing through barriers was it's whole thing, and he doesn't even need to be up close with that giant ass beam saber of his.
Burning Gundam will have the hardest time. It doesn't have a lot of long range stuff to fall back on, the best it can do is burning finger, and that probably won't work.

Shinji is not the one that goes berserk, it's the eva. When taken enough damage, the eva controls itself and goes on a rampage. Getting split in half will definately trigger the eva's rage.
Honestly, I only know that eva 01 goes berserk when it loses a limb or two. It's unknown whether it can regenerate after it gets split or not. But since it's unknown, I say it's fact that eva 01 does regenerate when it gets spiltted in half.
