Ignoring the utter stupidity of that fight, Thor was caught of guard, and surprised which allowed Rulk to take advantage. When he came back, mad, he had Rulk on his knees and at his mercy in moments. The Hulk saved his life at his own admittance.

Thor wasn't at full strength either.

Well saying Thor came back and whipped Rulk isn't really true either. He had help in doing so and Rulk was already tired from constant battles and it was essentially a 2 v 1 with Thor getting a cheap shot in to start.
