Seriously though, I'm leaning towards team 2 since it's Jean without a Phoenix but not a final decision.

Snowbird is kind of not a problem for team one to take out quickly. Sersi, on the other hand, isn't going quietly. Maybe not even "going" at all. I say the transmutes Jean and Ororo into gold or some shiz.

Storm and Jean wins this fight easily. Sorry guys. Snowbird is just a shape-shifter, IIRC. She doesn't even factor into the fight.
The biggest weapon on the Sersi/Snowbird side is Sersi transmuting ability. Sersi has one weakness with that. Volume. She can only affect a certain amount of volume. If she tries to transmute too much mass, the strain will kill her. We saw this in the arc with the Brides of Set where she was unable to transmute a Godzilla-sized sea beast that attacked the Avengers. Storm can take total advantage of this weakness with her powers. I can give serious arguments for Storm vs. Sersi going in Ororo's favor one-on-one (though, I honestly think it would be a toss up between the two). Adding Jean Grey to the mix is an overkill. Jean can play interference here. If Jean engages Sersi in TP combat, Sersi would have no concentration left to spare on any of her other Eternal abilities. Of course, Jean would have no concentration to spare on her TK abilities. However, Storm is left to strike out at Sersi with her elemental powers at will and without any retaliation from Sersi whatsoever.

So here's the fight: Jean immediately engages Sersi in TP combat while Storm quickly dispatches Snowbird. Then Storm turns her elemental powers against a defenseless Sersi who is still engaged in TP combat with Jean Grey.

Query: What is this transformed thing about Snowbird? What can she do while she is transformed?

Transform into Elder Gods that eats....other gods. Also Snowbird is more then just a mere-shapeshifter not sure where you got that.

The team is completely outnumbered and outgunned as even Demorgorge the God Eater was struggling fighting them. It was Snowbird taking the form of Neooqtoq a Great Beast and was taking them all on by herself
