He's physically superior, better fighter, and doesn't have to directly hit Bishop with his stuff(he'd likely absorb it). He'd just have to blow something up and the debris would crush Bishop.

Actually, there was that occasion once in X-Treme X-Men. Gambit trashed amped Bishop, while being depowered himself.
