Assuming that Doom is in character, and has already read detailed files on either of the Ghost Rider's he would be one step ahead of them, and would easily strip their powers from them. If someone like the She-Hulk reads up on super powered individuals, what are the chances that Doom has as well?

Seriously, Doom could pull up wikipedia mid battle.
