Anyone that has read Marvel with any regularity knows that adamantium is suposed to be unbreakable, correct? Wolverine has stated himself that this doesn't mean that he can effortlessly cut through anything. He still has to rely on his own strength to generate the force required to cut through something like say 6 inches of Carbonadium.
Those that have read Superman know that it's not so much the toughness of Superman's skin that allows him to deflect bullets and take damage that would kill most other heroes, but rather the protective "aura" that his body generates. Martha Kent commented on this when she made Clark's first costume. Lex Luthor and General Zod could both try and chop his head off with the same adamantium axe, but Luthors' considerably weaker swing would just get deflected, while Zod's would probably get the job done.
With these two facts in mind it would seem safe to assume that Wolverine probably doesn't posses the strength to required do accomplish this task.
So the question is this. Who is the weakest character that would be capable of taking off Superman's head with an adamantium sword?
