Aren't Watchers in general supposed to be above Skyfathers?

And Uatu in particular seems like one of the tougher Watchers.

I'd say he takes the majority.

I'd say he takes the majority. Dr. Fate at his peak is a Lord of Order. At their height lords of Order and Chaos should be > Skyfathers. Remember Shazam at RoE, Nabu and Mordru are counted among their number and I'd back Mordru over most Skyfathers when he's operating at a cosmic scale which he was during Kent Nelson era and Kent was considered a fair opponent when he was at his height as was Nabu.

I would put Aron the Rogue Watcher instead of passive Uatu.
