I understand there many different forms of Chopper, hopefully Pikachu can give some of those forms a run for their money! So who is gonna be the new pet for Strawhats?

The Straw Hats wouldn't replace Chopper since he's a doctor and their pal.

Not that they would need to since Chopper wins handily.

Well, basically no chance for Pikachu at all? Every form can tank lightning and all Pikachu abilities?

Pikachu has power to hurt Chopper certainly. But Pikachu isn't very durable and has been knocked out by much less than Chopper could dish out.

At this point Choppers also fast as shit. Faster than a majority of poke'mon speed attacks

If Pikachu has full control of his attacks and can use them freely with Ash's strategy but without needing him to give him orders, I think Pikachu could pull a win. Otherwise, I doubt it.
