In the movie he rolled down a hill and got larger and was still able to move. On top of that, he can move his parts around separately from each other. He could just smother minion with a piece of snow over his head.

Minions have survived explosions, being squished, all kinds of crazy lab experiments. They are very durable as well. Olaf is more durable but he is held down by the fact that he can melt
