In their last fight the Nautolan Master prevailed over the Cyborg General before being forced to a retreat by his Magnaguards.

We do know however that Grievous was not at his peak. He wasn't as experienced or skilled as he was later on in the Clone Wars, and he was still recovering from injury.

That being said, if the two were to have a rematch, both in their ROTS incarnations, who would win? Grievous or Fisto?

Well, while Grievous is significantly more experienced at this point, it cannot be ignored that Kit's Shii-Cho is still optimized for this type of combat, and that no matter how skilled he becomes with a lightsaber he will always be vulnerable to Force attacks.

This gives Fisto something of an advantage. While General Grievous has proven himself a formidable swordsman and tactician, and in terms of physical prowess and precognition has more than made up for his lack of the Force, he is still not going to be overwhelming one of the best swordsmen ever produced by the Jedi Order when at a disadvantage.

It's going to be a much closer match than their first battle, though.

Is RotS Grievous really his peak though?

Around that time he was overwhelming Obi-wan Kenobi's Soresu and defending against Mace Windu's Vaapad, so I'd say so.

If you mean their final duel, he didn't really overwhelm Obi-wan from what I saw; it looked like Obi-wan had him even without the clones. And didn't Mace crush him during their duel?

The Novel makes it clear that Grievous's twenty strike per second offense was overwhelming Kenobi's defenses, so Kenobi had to reduce the number of Grievous's arms to continue the fight.

During their lightsaber duel, Grievous calculated a response to Windu's Vaapad. Really there's two conflicting sources for their fight.

Is this Grievous from the novels and comics where he is a nightmare, or Grievous from The Clone Wars where he is a joke? If it's the comic version, it would be a very interesting fight and Grievous might have a chance to win if he can get the element of surprise first.

ROTS Grievous, so he was overwhelming Kenobi's Soresu with 20 strikes per second, and had already managed to defend against Windu's Vaapad.

If you are honestly that skeptical of Grievous's performance or believe various sources to be consistent, then you should check out this thread of mine: http://www.killermovies.com/forums/f6/t595911.html
