Mace definitely wins the bonus round...

1) Sabers: Windu
2) Force: Palpatine
3) All-out: Palpatine
4) Bonus: BMF Windu

ROTJ Palpatine became so powerful he no longer relied on Lightsabers, calling them Jedi Weapons. Without a Saber I guess he would lose, but in the rest he'll just stomp Mace. Except for the bonus round.

Samuel L Jackson wins the bonus round. Mace Windu though won't fair too well there.

Mace beats him again.. but easier.
