Was Dooku even going all-out on Kenobi? He seemed to just be playing with him casually.

Dooku wasn't having any trouble with AotC Kenobi. Anakin pressed him a lot more, and he still overpowered him with relative ease.

There's a point in the novelisation where Kenobi causes Dooku some issues. This is also bearing in mind that Dooku knows every weakness of Ataru and Kenobi would have been tired from fighting legions of droids prior. He did alright all things considered.

Kenobi does make Dooku retreat momentarily in the novel, but Dooku quickly turns the tide again and ends it. It's much more competitive than the movie fight, but Dooku is still in constant control.

Sure, but it's Dooku. Mundi didn't do much better against Grievous and in this case his exhaustion isn't limited to just himself.

Plus, Dooku was trying to turn Obi Wan and make him his apprentice. Which is why he only saber-burned him and didn't do any dismembering.
