I'd say Marek. He has more forms to use at his disposal and Luke would likely try to adapt to his style although I don't think it'd do much. If Luke's going to win he'd have to get past Galen's Soresu defense which I don't see happening. Further more, if he's gonna do that he has to withstand Galen's Juyo assault which I see eventually overwhelming him.
