In this scenario however Palpatine isn't a Sith Lord pulling the strings, he's just a senator. Valorum is still in charge, Dooku left on his own accord, Valorum made the GAR, etc. Could have the Republic won in this scenario?

Oh sure, without Sidious purposefully drawing things out the Republic likely would've won faster.

Or The Separatists would blitz the Republick by attacking Courscant in the first month of war with most of theirs armies. Then Kamino. Or otherwise.

CIS, without Palps pulling the strings behind, the CIS vastly outnumbers the GAR, they could literally just overwhelm via sheer numbers, as I recall Palps purposely held back the CIS because they had such an overwhelming numbers advantage. Add to the fact that Palps had a hand in giving victories(IE: Giving the location for the Cortosis SBDs), plus Valorum is kinda a moron...

CIS crushes the Republic with its 12 (20?) quadrillion-strong army. The CIS could lose every battle and still win in the end through sheer attrition.

Depends on how much you think Sidious built up either side. But considering Sidious created the Republic's only army, it doesn't bode to well for them.
