I forgot which novel it was, but there was the suggestion that the only reason Vader couldn't heal his mustafar injuries was due to his mindstate. Therefore, redeemed Anakin is ideally on par with full potential Anakin, making this a stompfest regardless.

He has to reach that potential first, getting a different mindset and being fully healed wouldn't make him reach that potential, he'd have to earn it through training.

Vader flees the battlefield, regenerates his lost limbs (in one of the EU books, it's suggested that the reason he can't regenerate his lost limbs is due to his hatred), then comes back as Full Potential Anakin. He then proceeds to destroy Scourge with the slightest gesture before going on to spank Abeloth, GM Luke and Darth Krayt at the same time just for kicks.
