Which beast would win?

Well the Rancor vastly outclasses in size

Rancor- Average height, 10 meters

Lylek- 4 meters.

Far as durability goes, the Rancor is resistant to blaster fire and melee weaponry.

The Lylek isn't doing any damage to the Rancor whereas the Rancor can easily crush the Lylek, Rancor stomps.

Where is it stated that a rancor's average height is 5 meters?

Essential Guide to Alien Species has an average Rancor height to be 10 meters.

Can't say, Rancors vary greatly in size from place to place.

That doesn't matter, their offense which is melee isn't doing anything to the Rancor body. Meanwhile the Rancor outclasses it in size and could tear it apart with its large hands.
