How good duelist would he become if he remained Ataru specialist?

He could suck, he could be amazing. This is like saying what if Yoda tried to master Djem So.

Maybe not as legendary, although he was already pretty darn good in TPM for his age.

He wouldn't be able to beat Anakin. Soresu is what kept Obi-Wan alive as far as I'm concerned, and if Obi-Wan was using Ataru, the battle on mustafar wouldn't go the way it did.
