Surik, honestly.

The fact that Traya couldn't ragdoll her, suggests Mace cannot even touch her with his power.
Regarding a duel: Surik can mimic and adapt to anything Windu does, so yeah, he's kinda in a hopeless situation.

Surik has killed armies of people who're Ventress level, Mace needed all his skills just to defeat one. As Kevin Bacon would say, It's a no-brainer.

Surik wins.
