Dooku does what he initially did to Anakin and Obi Wan, and then beats Maul.

Dooku was playing with Obi Wan, and the novelization makes a note that he went faster and stronger against Yoda than he had against the pair.

Yeah but he still incapacitated him in a single move...

In either case, he took on Obi Wan with a superior combatant that also has substantially better chemistry with Kenobi, and still managed to get it down to a one vs. one with Anakin. I don't see why he couldn't do this now that you've replaced Anakin with a weaker fighter.

They genuinely don't do as well in teams as they do on their own.

Apparently they do, seeing as how Dooku was getting demolished by them when they starting getting serious. But that won't happen here, because a) Maul is weaker than even a restricted Anakin, b) Obi Wan and Maul would have actively inhibiting chemistry, and c) once Dooku dispatches of Obi Wan like before, he certainly isn't losing to Maul.

Maul has beaten Kenobi in every scenario they've fought in.

Maul beat him when he fought with Ventress.

Beat him solidly in TPM, and won using the Force when it was him and Opress vs him.
