What does "all it's equipment" mean? Are we talking an entire fleet of Borg Cubes?

Though all they would really need is 1 cube.

So basically, this is a fight where one side has hundreds if not thousands of space ships with transporter technology vs a planet that has no real space capabilities.

They only need one cube. The Borg don't conquer they assimilate. There's an argument to be made that the wizards could actually prevent assimilation. Technology doesn't work around wizards if they are in large enough numbers so a bunch of them gathered in one place(like Hogwarts) might work. On the other hand technology in the HP world isn't anywhere near as advanced as the Borg.

Even if they prevented assimilation the Borg would just destroy them from orbit. The best case scenario here is death.

When a humanoid is turned into a Borg, all their thoughts and memories are absorbed into the collective (eg how the Borg knew to counter the Enterprise's deflector shield attack after they assimilated Picard and turned him into Locutus), so the Borg would become aware of magic and what it takes to wield it after assimilating a wizard.

They take in genetics and thoughts. What else does it take to be a wizard?

Even if you want to argue that once a wizard becomes assimilated they ceases to be a wizard and therefore Borg don't have access to magic through said Drone, which is definitely an argument that can be made, the Borg still shit stomp here. A single Borg Cube can contain close to 200,000 Drones. The Borg also has been known to transport other humanoids directly into assimilation chambers.
