Ahsoka is definitely up there, as we know she was still around after the events of RotJ.

There are also a few Jedi whose endings haven't been concluded one way or another yet. Namely Quinlan Vos, Oppo Rancisis, and Coleman Kcaj. They could still be around during RoS for all we know... /shrug

Apparantly in the canon book Force Collecter there is a Jedi named Naq Med who survived 30 years after the Battle of Yavin. He left the order before the Clone Wars even began. That means he died a few years before the events of the new tilogy.
