And the KoR also never displayed any offensive Force feats to suggest they could beat Grievous that way either.

Looks like you're right. They definitely are resistent atleast at the ends. Hard to say who wins then, probably would give it to the KoR actually now but that's more speculation than anything since they have little to scale off of.

At most, Grievous may have to swing his sabers a little harder than normal to cut through them.
I still think the KoR should've at least had the same type of weaponry as the Praetorian Guards, but alas...

Lightsaber proof or not, Grevious is still mincing them. These guys were fodder, padawan tier likely. Do you think a bunch of padawans could take on Grevious?

The fight to me shows you can't just casually cut through them, and if you were to put your bodyweight into it, once the blade cut you'd slip most likely.
And Grievous was hit by some random gungan at the start of the fight, if that was one of the knights weapon's he'd probably be done.
The Knights were also able to move Kylo who is obviously strong in the force, pretty sure they could move Grievous easier. Six Padawans could probably take on Grievous yeah.

It was hard to tell exactly what was happening to their weapons in the film, because the scene was really fast/short, and also really dark.
But in The Rise of Kylo Ren, we saw their weapons fail multiple times against Luke's saber:

Now I suppose it's possible that the KoR made their weapons stronger after Luke raped them(it did look like they were at least able to block a few of Ben's strikes in the film), but as the VD states, they still weren't lightsaber-proof and could be cut through with a greater application of pressure. And given the fact that Grievous is also very strong physically, it seems likely that he would be able to cleave through their weaponry as well.

I don't think the intent was for the KoR to necessarily be fodder. Ultimate Star Wars states that their fighting skills and martial prowess was "without equal":

But the RoS VD notes that the KoR's Force-sensitivity was "stunted", and goes on to state that they would have been the perfect stock to become Inquisitors back in the Imperial days:

So given their lack of proper Force training, the individual members of the KoR are most likely below the level of your average Inquisitor... They do have pretty interesting powers, though -- whenever Vicrul kills an opponent, for example, he takes their soul and uses it to augment his own power(Highlander style.)
Regardless, they only ever fought two opponents:
-Post-RotJ Luke, who utterly humiliated them. But that's definitely not a poor showing, given that Luke was, in all likelihood, the most powerful character in the mythos aside from RoS Palpatine.
-Ben, who also stomped them. But it's interesting that he was getting his ass beat by them until he got a saber(not sure why he couldn't just dominate them with the Force beforehand..?) And like you said, the Dyad was also amping Ben at the time.
Those definitely aren't 'low' showings at all by themselves. Thing is, the KoR really have no other feats that can help us properly gauge them. As of now, all we can infer is that they are around Inquisitor-level(at best), and obviously WELL below the level of Luke/Ben.

It's a Grievous shitsomp Hyperbole. Kylo is more powerful than everyone under their own power at his peak save Rey. Those two were the most powerful force users from the film. Disney best over backwards raising stakes, feats, force abilities, and scale.

Look at their feats alone. Ren and Rey were extremely powerful most of the prequel Jedi were not.

Statements are illogical in the world of star wars. There are always numerous contradicting statements between writers and characters. (I'll list examples if you want). Rey's most impressive feat was the thing w/ the starship, which K'kruhk managed to do with an imperial ship. And he is not on the level of even Secura or Drallig. rey is not stronger than Palpatine. Her lightsaber was what won that fight.
