Darth Maul (SoD) vs Luke Skywalker (TM)

Honestly, Luke, no contest.

Son of Dathomir Maul is either on par with or slightly below Season 7 Maul, who in turn was barely above Season 7 Ahsoka. Ahsoka herself implied that Season 5 Anakin would have destroyed Maul (which, given Ahsoka's performance against the former Sith, is probably an accurate assessment).

Now, we know Anakin grew massively between Season 5 and RotS due to his time spent fighting in the Outer Rim sieges. We know Vader as early as the Tarkin novel had already surpassed what he had been as Anakin. He then continued to grow fairly constantly throughout the years, especially after the events of A New Hope. And as we're being shown in the current Darth Vader run, Palpatine basically reforged Darth Vader after he turned into an emotional wreck post-ESB, so he should be stronger than ever by the time of RotJ.

Meanwhile, RotJ Luke is RotJ Vader's equal, if not outright superior, as shown in both the actual script of the movie and the novelization Beware the Power of the Dark Side. Complain about Luke's insane growth all you'd like, it doesn't change the fact that RotJ Luke is canonically comparable to RotJ Vader. We also know that some time between ESB and The Mandalorian, Luke find's Jocasta Nu's hidden academy, where she had created several holocrons that contained the full wealth of her knowledge (which was so vast that Palpatine considered Jocasta Nu to legitimately be one of the most dangerous Jedi in the galaxy post-Order 66). On top of that, Luke found several of Palpatine's own stores of knowledge and artifacts, as depicted in both Shattered Empire and Battlefront II.

Between Luke's insane power advantage and his insatiable thirst for knowledge, not just from the Jedi, but from any and all Force traditions that he could find (as depicted in The Legends of Luke Skywalker), he should hold a pretty comfortable advantage over Maul. That's not to say defeating Maul would be easy for him, necessarily. I see the fight playing out somewhat similar to ESB Luke's duel with the Grand Inquisitor. Maul should still have more technical skill as a combatant, and would probably pressure Luke if he was able to keep it purely blade-to-blade. But the moment Luke uses so much as a single Force push, Maul is basically done for.

Honestly, there are very, very few Canon characters I can picture holding their own against Luke by the time of The Mandalorian, or any point after.
