Wade in both IMO. Guns will only delay things. Not only was he able to easily deflect the barrage of close range AK fire, but the bullet cutting puts him in a totally different speed class to even Blade. If you watch the scene you will see that the guy is only a few yards away and fires while Wade has his back turned. Wade sees the reflection of the guy and the muzzle flash in his sword and only then starts turning, yet is still fast enough to spin around and cut the bullet in half, in such a manner that the two halves kill the guys behind him. That is a completely insane speed/reaction time feat. He also then casually deflects a bullet into another guy while not even looking.

Wade has the way upper hand in swordsmanship, but doesn't possess Blade's raw strength.
If Wade can move fast enough, then he could probably cut Blade.
