Eh, manipulating a black hole, utterly dominating high-tier characters with TK, and hurling huge ass shit all come to mind.

Pinning Jacen's command chair to the floor of his ship, with Jacen in it. Jacen couldn't get up until Luke left. And even after that his chair stayed stuck no matter what he did.

Oh yeah, there was that one time he went OCW Mace Windu on an army of Vong.

And yeah, supposedly he can go Super Saiyan as well, though I'm not sure when he's done this.

The first time he went to Hapes and met the Prince, he literally walked on air, and that's why he thought his name was Skywalker. Also if I recall he redirected turbolaser fire from a ship, and piloted the Millenium Falcon as well as operating all the guns by himself with the Force.

Those are the easiest feats to remember and are the most grand when it comes to showing off.

Like if you ask about Starkiller, the main thing that comes up is moving the Star Destroyer.

It didn't flat out say he moved hundreds of times Lightspeed. He was fighting in the time-span of a Nanosecond and the feat quantified was hundreds of times LS. I'll try and find both the quote and calculation. Also during the Specter of the Past novel he claimed he could do this:

Luke looked out at the incoming pirates, a sudden tightening sensation in his stomach. There were many options, of course. He could reach out with the Force and damage the ships’ control surfaces, crippling them. He might even be able to wrench off whole hull plates or deform the weapons emplacements, tearing them apart with the Force alone. Or he could simply reach inside to the crews’ minds, turning them into helpless observers or even forcing them to surrender. For a Jedi Master with the Force as his ally, there were no limits. No limits at all.

The ships he claimed he could do this are these:

Artoo beeped uncertainly, and a list appeared on Luke’s sensor scope. Two mangled-looking Corellian gunships, an old but impressively big Kaloth battlecruiser with an equally old KDY a-4 ion cannon welded awkwardly to its bow, and five Corsair-class assault starfighters. The whole group of them were in encirclement formation, closing on a pair of medium transports a few kilometers below and ahead.
