Is the dialogue of a story canon only to the character's alignment? Like in a DS route for example you hear information on a character or event that you do not hear from the LS route but the LS route is canon, however the dialogue found in the DS route doesn't necessarily contradict your character. All it's doing is giving some more info on a character/topic. Is it ok to use that info or it should be regarded as non-canon?

If it's Swtor/kotor(II) then yes, most people accept dark side things as canon in that it could happen.
For example, Traya stabs herself in the stomach and heals herself before walking off, to prove a point. It's generally viewed canon that she has that level of stamina and resistance, but it obviously never happened.
