Just a general question did darth maul ever : in canon or legends ever use or wield two double bladed light sabers like Prong Krell ?
Or if not reckon he would have the capability or ability to wield two like Prong Krell proficiently ?

Nope.
He's not big enough and lacks the dexterity to dual wield double bladed sabers.
