The newest issue of IDW's Star Wars Adventures showed us what I believe is our only canon look at a duel between Count Dooku and Mace Windu.
I don't have the scans currently (I might try to upload them tomorrow or this weekend).
Not the most amazing duel ever, and like most IDW comics, not the greatest art either. The duel didn't really definitively answer any questions, but I suppose it could be inferred that Dooku has a mild advantage over Mace until his stamina begins to wane (Dooku was clearly depicted as having the upper hand earlier in the fight, but by the end of the comic, Mace has the upper hand and Dooku retreats).
Still, it was neat to finally see these two cross blades in an official canon source.
I would chalk up Dooku's concession as condescension. Due to his ego even if he was outmatched I don't think he would admit it.

Winning? Windu lunged and attacked Dooku who blocked all of his saber attacks, it seems once Windu wasn't getting anywhere with sabers he switched tactics and used force attacks on Dooku.

I agree with Juggernaut here, even though we're not fans of each other.
Mace and Dooku parried each other's strikes and got a successful Force Push in each.
Nothing more, nothing less. People will believe what they want to believe and even see what they want to see, but let's face it - there is no superiority shown here. It's a classic stalemate. And not a lot of material to work with, to begin with.
I mean yeah, it was pretty even overall but Mace looked more impressive IMO. His force push knocked Dooku back further and Dooku was on the defensive the whole time, even running away at the end. I don’t even like Mace much as a character but I think he was definitely winning.
