Just out of curiosity what stops a redneck with a gun from blowing off her head? I mean, if she is uber telekenisis type, wouldn't logan or cyclops just be able to blow her away?

The way I see it:

Magneto vs. Jean Grey (current): Magneto, easily
Magneto vs. early Phoenix: Magneto (he beat Phoenix before), after a tough one
Magneto vs. Rachael Summers: Magneto: Magneto, with some effort
Magneto vs. Phonenix at the end of the Phoenix Saga: Phoenix, with some effort
Magneto vs. Dark Phoenix: Dark Phoenix, easily
