Unicron Can regenerate a new body over time though. Nothing can destory his spark (Life Essence) even the Autobot Matrix couldn't finish him off.

Unicron would eat Galactus' ship, then kill Galactus, Then chow down on Ego.

Unicron would eat Galactus Ship before he even got the chance, Remember Unicron is Omniscent, he can see anything happening in the universe, so he would never be caught by suprize.

OR he just transforms and then its really bye bye galactus.

well, it depends what level of power galactus was at before the battle..... if he was aroung 80% or so, he would have a chance, but much less then that and he'd be destroyed

In the comics using Matrix was basically Primus commiting suicide to stop Unicron.

Unicron is fallen god that once voided out everything that there is to be. He's pure energy that took the form of a robot planet after the big bang. He has the power to destory the stuff that space is made out of. He existed for the before the big bang. Even at full power what could galatus or ego possibility do to him. Unicron could completely void these guys out.
