You're quite right about this. Galactus, however, isn't an eternity level being by any stretch of the imagination. Not once in canon or non-canonical publications has galactus been portrayed as anywhere eternity level in any conflict. Not even close. Nevertheless, Galactus should win this quite easily as neither of the other two has the raw power to truly harm galactus. As we have seen the omega effect, the old darkseid's best chance of victory, is now nothing more than a party trick to the likes of superman, let alone galactus.
not an eternity level being?...... even when dr. doom absorbed galactus+his ship which equals a full power big g, he talks about being one, and having unity with the universe: http://img137.imageshack.us/my.php?...warenessct0.jpg

Not even that is FP Galactus.Earlier it's said that Galactus was not only going to absorb his world ship but also the entire solar system to fight the beyonder.
All he says is that the universe holds no secrets for him since he can see and understand all the energies that eternity is made of. This has nothing to do with how much power he has, only how much insight he has into the universe. Of course its crap writing (molecule man and beyonder are idiotic characters to begin with) since Galactus has never been shown to have that kind of insight into anything, not even the minds of his own heralds and certainly not the past or future, which is what doom (and galactus) would be able to see if eternity truly hid no secrets from him. If ever there was an example of PIS this is it.

Galactus fighting Tyrant destroyed galaxies... When did darkseid/thanos do that?
The biggun for the win!
