ESB Luke vs. Mace Windu
Okay, at first glance, this is a seemingly impossible battle for Luke. He has some natural talent, but isn't up to speed with an average Knight, nevermind a master like Mace fo' fukin' Windu.
To even it out, Luke has help from the following people, none of whom can attack Mace of defend luke, but may assist via battle meditation or whatever non Hands-on methods they choose.

Oppo Rancisis
DE Leia (preggo)
Odan-Urr
Arca Jeth
Palpatine
Nomi Sunrider
Yarel Poof
Master Thon
Also, he has an hour of talking with Thrawn and Revan about the battle field, and an earpiece (that Mace is not allowed to destroy) that is connected and he can receive input from them.
Speculation, but, it's just as good as any Revan thread...
It won't be easy, but we're talking about some pretty insane levels of battle meditation here, all focused into one person. That would likely break the spirit of any force user, and Mace Windu really isn't that impressive anyway.
I mean Bastilla alone could turn the tide of entire battles, and grant a losing side victory near instantaneously. Nomi could literally just visualise something, and it would just happen; she could force her will into reality. Arca Jeth and Odan-Urr had similar skillz to Bastilla, and Thon was no slouch either. DE Leia was able to grant DE Luke the skill to take down DE Sidious in saber combat, when moments before he was getting completely wtfpwned. Palpatine, from what I've heard, had skills beyond even Bastilla. Add in Yoda, Poof, and Rakishi (who aren't exactly slouches either), and Mace will basically be lying on the ground, crying like a 6 year old.
Now as badly as ESB Luke sucks, he'd take a broken Mace Windu.
Not in a force fight, seeing that palpatine as of ROTJ to Dark empire was able to use force lightning to reduce 3 force users to ashes and the same lightning that effortlessly destroyed 100 storm troopers.
Oh right how i forgot palpatine could cut another off the force as well as creating a hyperspace wormhole, a churning vortex dubbed "Force storm" which can destroy space and time as well as take out an entire rebel fleet and destroy a planets surface.

Actually, sidious was not able to beat mace in a force fight either, he could not lightning mace cause mace would just keep deflecting it, and Mace would also deflect anything else sidious sends at him, including a force push or a choke. Mace has Vaapad and the superconducting loop of vaapad is almost completely "force-proof", unless sidous catches him off guard.

Right it was sidious as of ROTS whom hasn't fought in 13 years, i still think contending with him despite that fact is pretty interesting and remarkable.
Do you even read the comics which are classified as canon? Mace would get owned by dark empire sidious which has been described as the most powerful sith lord who had ever existed and one where he could move faster than the eye can see.
How bout the fact that as of DE he mastered every aspect of the force? That he had a technique dubbed the force storm which destroyed thousands of people and warships, ravaged the surface of coruscant and destroyed his own flagship which was what? 17.5 KM long?
Prove that a lightsaber can deflect a force grip or force crush. Right you can't because it isn't proven that he can
Hell prove his vaapad can defend against something which can destroy an entire armada.
Hell sidious as of DE can easily cut mace off the force

If Vaapad can deflect force lightning and force rage, than it can deflect any other force attack. The superconducting loop of vaapad is capable of deflecting basiclly any force attack besides the thing where sidious clouds others from using the force.
