I take Nom Anor's reminder to Tsavong Lah that the New Republic had cleared away for them a very powerful and organized military force in the Empire, that would have been a more dangerous opponent.

To borrow an obsolete phrase, the Empire pwns. Han's assessment was hilarious, but rhetoric: propaganda used to dissuade an Imperial spy from advising the Remnant to ally themselves with the Vong.

If Empire is aware of Yuuzhan Vong's existence, then they have no chance. Their main weapon was deception and destabilization. If it was Empire instead of Republic, the first thing they would do is infiltrate and disable Death Star. And they would start open war only after they are sure, that Empire is crippled enough to be defeated. But they would still not win because of hidden technologies inside Maw. Indestructible ship armor and smaller version of Death Star is a guarantied win. And if we take Palpatine into equation, who knows what other super weapons he would invent during the war. Not to mention that they can't kill him, he would resurrect as much as he wanted.
The only reason the New Republic had so much trouble beating them was because they gave the Vong so much time and rope, refusing to commit until the Vong had serious momentum.
If the NR had responded promptly and in full force, they would've won much sooner and more solidly with much less damage.
Pretty much any time the galaxy is unified and at least semi-militarized will beat the Yuuzhan Vong invasion.
If by interesting you mean ugly. They had fleshy, bulbous looking sapceships in Star Wars since the mid-90s.
