Nox was able to utterly dominate Thanaton, who was very powerful himself. Its not a case where Dooku wins no questions asked.

I can gather that, her force powers take a few rounds but she loses sabers and his force abilities are immense in their own right.

It can definitely be questioned, but I'd still count Dooku the superior, pun intended.
It would be hard to argue the heir of Tulak Hord isn't formidable in her own right, obviously.
