The reason Shaak did so well against those MagnaGuards is because she became too unpredictable for them. They're trained only to fight Jedi, with lightsabers, using the classic forms. When Shaak was using a lightsaber she struggled against one and was disarmed when faced with a group. But when she picked up a staff, the MGs lacked the programming to actually combat her. Her killing them is a showing of the MagnaGuards limited programming and lack of ability to adapt rather than Shaak's skill with a Saber.
Having said that, Dooku could wipe the floor with plenty of them. Their training comes from Grievous, whose training comes from Dooku. They share Grievous' own programming, and Dooku knows their tendencies well. He knows that being unpredictable can throw them off. Not sure how many exactly but quite a few anyway.

Yeah, TCW makes perfect sense. Like how Barriss Offee turned dark completely out of the blue with no previous hint at all, or how she can suddenly wield dual blades on par with Ventress, despite the fact that she was always shown as a single blade specialist. Yeah, great consistency.
The PT makes sense? Let's see:
"Let split up and stow away on separate ships so we have no idea where we'll land and could easily end up thousands of miles apart."
And not to mention,
"The speediest way to get to the Naboo is going through the planet's core."
Did you understand my sentence there ? I doubt. I said PT Movies & TCW is consistent with itself. Did we see Bariss Offee in any movie ? Then how do you know she was suck ass duelist ?
And that is also consistent with Anakin's level in TCW / RotS, if Anakin was so powerful, just like Yoda, Windu or Sidious level, he could just stomp her. But no, he failed to stomp Barriss and as well as Ventress, then he lose to Obi-Wan. It is consistent in that way.

Where in that sentence did I claim that Barriss was a "suck ass duelist?"
NEVER! That's where!
I will spell it out for you.
* Barriss appeared in several episodes throughout TCW and in each one she was shown to use a single lightsabre. Even if she had trained with two blades, clearly one was her specialty.
* Then in one episode she is suddenly using two blades on par with someone who specialises in that style. It would be like say, someone impersonating Darth Maul and using a sabre-staff just as good as he does when they've never used one previously.
And again, where did I EVER claim that Barriss was a "suck ass duelist?"
Putting words in another's mouth like that is just pathetic.
