Obi-Wan's greater speed, reflexes, insane durability and endurance grant him the undoubtful win. Shaak demonstrates great strength when destroying the magnaguard with a kick, and with other things like that there, but Obi-Wan's capability of opening Grievous's armor edges it out for anyone who know how inasnely durable that thing was, not to mention going to toe with physical powerhouses like Maul or Grievous. The only thing equal is their stamina.

Shaak Ti certainly.
Physically she's faster, stronger, as durable, has greater stamina and faster reflexes.
Kenobi's Soresu won't be greatly effective against Shaak Ti's Makashi either, leaving them at a relative impasse.
Shaak Ti has the edge in terms of the Force. Her ability to somewhat defend herself against Galen Marek should mean Kenobi's Force attacks are ineffective. Her ability to telekinetically hold back an Ocean, summon Kinetite to subdue Galen Marek and more is going to drastically effect the battle.
