In a rematch, Mace would know what to expect and get into his "canon anger amp" mindset earlier.
Sheev would also know not to toy to with Windu and would try to blitz him from the beginning or overwhelm him with the force. Assuming this is sabers only, he'd have a tough time circumventing Mace's "amp".
I'd honestly say this is a stalemate. Environmental factors determine the victor in a saber fight, but in anything else Sheev will just resort to his force powers when he can't break through.

Actually, the novelizations are canon when they're not directly contradicted by the films. Vaapad and Shatterpoint appear in the ROTS novel, and nothing in the film contradicts their existence or role in the fight, so they're canon.

Regardless, in the novelisation, it's clearly stated that even Vaapad couldn't resist Sheev's lightning attack.

Nah, Pablo's exact words were to me were "in cases of contradiction, defer to the movie" the meaning should be pretty clear. For example, Fisto being decapitated by Sidious is non-canon because he wasn't decapitated in the film, but the existence of Windu's Vaapad amp and use of Shatterpoint, while not explicitly shown in the movie, aren't contradicted either. So we can assume they're as canon as anything else in NuCanon.
