Mitsurugi has neither infinite stamina nor a healing factor. In fact his durability is pretty poor by comic book standards. One bullet from an antique rifle knocked him out and nearly killed him way back in Soul Blade (Arcade/Ps1)
Wolverine is substantially more durable and arguably more skilled (he IS a LOT older) Wolverine would simply wear him down and kill him when he got tired.

Bone claw wolverine would take a lot of damage to before wearing him down and would probably get koed because of all the pain inflicted on him be the the Kitana. Bone Claw wolverine has no defense for that blade.

uh, bone claws wolverine had an insane healing factor, and wolverine has taken a LOT of damage with no ill effects. BC wolverine jumped out of a plane at several thousand feet with no parachute, then immediately got up and fought the phalanx. If that amount of pain doesn't slow him down, one katana isn't going to either.
wolverine is also very, very skilled in the martial arts- scans exist of him taking on dozens of hand ninjas with katanas simultaneously, as well as going head to head with EXPERT SUPERHUMAN martial artists like the silver samurai. It's highly unliklely Mitsurugi has any moves he isn't familiar with.
Mitsurugi has no chance. Wolverine is stronger than he is, more durable, more highly trained, has superhuman stamina, and heals from any would mitsurugi could inflict in a matter of seconds. all it takes to take mitsurugi out is one well placed hit, or he could simply keep his distance until M runs out of stamina.
