Although all he did was collect all 6 Infinity Gems, he wasn't specifically trying to get the Infinity Gauntlet, the gems powered a crux which he thought would cure his hunger.

But topic at hand I think with the gauntlet he'd be able to use it better than Thanos.

I'm sure Galactus could not only accept omnipotence more readily then Thanos, but Big G could better understand how to fully control such power.
