The only thing I can imagine is that Lucas liked the shot of four Jedi with ignited lightsabres so he put it in and than realised that they couldn't do a fight that way.
Wasn't it on the dvd that it is said that they suddently wouldn't do it with stuntmen and that that old guy needed to learn it all really quickly?

but I do not understand that... they are showing they can use stuntpeople and paste faces of actors over it. So why couldn't they do that also now?
